To see the Apple Pay button you have to:-

Work with the Live Mode, case Apple Pay NOT available with test mode.

Use the Redirect Mode, NOT the Pop up.
Your customers have to:

Use apple device

Use Safari browser
-
Have saved card on Apple wallet.
Notes

Apple pay works only in Kuwait, KSA, UAE, BAH, and Qatar currently.

Apple pay works with KWD, SAR, AED, BHD, and QAR currencies.
